New Year’s Day Banana Pancakes

I’ll be back with regular willowday posts soon but wanted to extend this month where I’ve been able to celebrate creative collaborations, sharing them with you here. I hope you’ve enjoyed this series. It’s been such fun to organize and today, I’ve invited one more guest with a breakfast to start the year.

Happy New Year everyone! Let’s start this year off with a healthy, filling and delicious pancake breakfast. The oats in my spiced banana oat pancakes contribute slow carbohydrates for long lasting energy, and fiber that helps balance your cholesterol. Not bad for a pancake! — Amy

Ingredients for two:
2 ripe bananas
2 eggs
1 deciliter / circa 1/2 cup oats
1/2 teaspoon baking powder
1 pinch salt
1 pinch each cinnamon and cardamom
1/2 tablespoon coconut oil for frying

Blend bananas, eggs and oats for about 1 minute. Add baking powder and spices and blend. Let batter sit for 5-10 minutes while you set the table and fix some tea or coffee. Fry pancakes in coconut oil, and serve with maple syrup, fresh berries, and a dollop of creamy yogurt.

Now, are you sitting down to a delicious breakfast? Let’s take a moment to chat about your New Year’s resolutions! Did you make any? Here are my top three most important steps to making a resolution that you’ll keep all year long:

1. Look into yourself. Is your resolution about something your really want to change? Make sure that it is, and that it’s not about what someone else, or society in general, seem to think you need to work on…
2. Be absolutely clear. A vague goal is hard to reach. Instead of saying “I’ll exercise more,” be specific and concrete: “I’ll exercise 3 times per week, in the morning before work.”
3. Make a realistic plan. Oh yes, you can make an ambitious and exciting resolution, but make sure that you also prepare a realistic plan with notes on how you’ll get there.
