Trick or Treat Flatbread

Hello and welcome back! Our kids are home on Fall break and I’m captive to their schedule. I’ll post between play over the next weeks. I surprised everyone with these treats, as we started the weekJack-o-lantern Flat bread Dippers.

These are so simple! 
I used a thinly rolled pizza dough. I like to make pizza dough (recipe below) but you can make these from dough you buy at the grocer or have you ever bought pizza dough from your local pizzeria? I used to do this, in our former neighborhood. 

 

Classic Pizza Dough Recipe 1 teaspoon active dry yeast 1 teaspoon honey 1 1/3 cups lukewarm water 2 tablespoons extra-virgin olive oil

1 teaspoon sea salt 4 cups bread flour*, plus more if necessary Directions In a small bowl, combine yeast, honey, 1/2 of the water. Stir to blend. Let stand until foamy, about 5 minutes. Stir in oil and salt In the bowl of a heavy-duty electric mixer fitted with a dough-hook attachment, combine yeast, sugar, and water, and stir to blend. Let stand until foamy, about 5 minutes. Stir in oil and salt. If kneading by hand: Add flour, a little at a time and knead until soft and satiny but still firm, about 8-10 minutes. If using mixer with bread hook: Mix at the lowest speed until most of the flour has been absorbed, and the dough forms a ball. Continue to mix at the lowest speed until soft and satiny but still firm, 4 to 5 minutes. Add additional flour, if necessary, to keep the dough from sticking. The dough will be quite soft.

(*This recipe is for a classic dough. I often use a combination of spelt, whole wheat with a little bread flour mixed)

HOW TO MAKE Jack-o-lantern Flat bread Dippers:

Preheat oven 400 F / 200 C

Make Pizza Dough and let it rise once. Punch and it is ready for use.
Prepare working surface to roll out the dough.

In a small bowl combine the following spices.

Spice Combination:
1 Tablespoon Paprika

1 Tablespoon Cumin
1 Tablespoon Tumeric
1 Tablespoon Salt (to taste)
1/2 Teaspoon Cayene Pepper (Optional: to taste)
 
To make the Jack-0-lanterns:
Pinch a large palm sized piece of dough to make a jack-o-lantern. Press one side of this dough into the spice combination (above), then, spice-side up, place this down on a lightly floured rolling surface (for sticking). Roll a circle. Tidy the shape with sharp knife, if necessary. With a sharp knife, cut out shapes for eyes, nose and mouth to make a jack-o-lantern. Repeat this until dough is finished. Lightly dust pizza stone or baking sheet with a sprinkle of corn meal.  Transfer jack-o-lantern shape to the baking surface. Fill tray with shapes, not allowing the edges to touch, side by side. Optional: Before placing in oven, sprinkle jack-o-lantern with a pinch of sea salt and dash of olive oil for a more glossy surface. Bake approximately 8 minutes, until crispy and brown but, not darkened. Remove from oven, place on cooling rack and when cooled, they are ready to be served. These pair wonderfully with hummus!
